This is very helpful. We use several topics from Symbolon: The Catholic Faith Explained for the precatechumenate of our OCIA process. We also use Symbolon for teens for our teen catechumenate. I know they have a new version of Symbolon out, but this one works well for the OCIA process. I hope they do not discontinue it.
